Chile verde

Pork slowly stews with jalapenos, onion, green enchilada chile verde and spices in this flavor-packed Mexican dish. It’s wonderful on its own or stuffed in a warm tortilla with sour cream, grated cheese or olives on the side. Add the enchilada sauce, water, jalapenos and cilantro.

Cover and cook on low for 6 hours or until meat is tender. Look up verde in Wiktionary, the free dictionary. Verde in Spanish, Portuguese, Italian and Romanian means “Green”. If an internal link led you here, you may wish to change the link to point directly to the intended article.

Geographic and personal tastes involve different types of meat and other ingredients. Recipes provoke disputes among aficionados, some of whom insist that the word chili applies only to the basic dish, without beans and tomatoes. In writings from 1529, the Franciscan friar, Bernardino de Sahagún described chili pepper-seasoned stews being consumed in the Aztec capital, Tenochtitlan, now the location of Mexico City. Chili became commonly prepared in northern Mexico and southern Texas.
